Introduction
This page is meant to be a practical guideline for food businesses in the fish industry preparing themselves for implementation of traceability oriented practice in their own company. Recommendations given are based on principles and requirements set in the TraceFood standards.
Defining traceable units
First step in implementing traceability is to define your traceable units. A traceable unit often refers to the smallest traceable unit that is exchanged between two parties in the supply chain and may be a catch from a given boat, a catch from several boats at a given date, a pallet, or a box.
Good Practice
The ISO/DIS 12875 “Traceability of finfish products — Specification on the information to be recorded in captured finfish distribution chains” which is available in draft format at the time of writing, may serve as a reference document for recommendations.
- The traceable unit should be identified and labelled with a globally unique identifier.
- Record or allocate unique identification and recording on captured fish.
- Allocate unique identification of outbound fish products
- Link all information about ingredients and raw materials directly to production batch
- Integrate quality control systems with traceability system

For white fish, a European standard already exists, and an ISO standard is available as a draft.
